The forestero is the variety of cocoa tree that originated in the upper Amazon region. The word forestero means “foreign,” and the tree is the most widely cultivated as it has a high yield.

The criollo is the original cacao tree and is the variety the Spanish first encountered in Mexico. This variety isn’t cultivated much today as it has low yields. But the cocoa that is harvested off this tree is used exclusively in the making of fine chocolate.
